Slight pH changes can temporarily inactivate enzymes by altering enzyme and substrate ionization, while extreme changes cause denaturation by breaking ionic bonds.
Front | Effect of pH on enzyme activity |
---|---|
Back | A slight change in pH: • Causes ionization of amino acids of enzyme, so enzyme becomes inactive temporarily. • Also affects ionization of substrate. Extreme changes cause *ionic* bond-breakage and denaturation of proteins. |
