Glycosidic Amylose Amylopectin Polysaccharides Starch Collectively 2.1.2(f Alpha

Starch is composed of amylose (unbranched chains of alpha glucose linked by 1,4 glycosidic bonds forming a helix) and amylopectin (branched chains with 1,6 glycosidic bonds at branching points).

- many alpha glucose molecules join by 1,4 glycosidic bonds to form amylose (no branching and the long chain forms helix)
- same with amylopectin but after every 24 1,4 glycosidic bond, theres a 1,6 glycosidic bond (branching)
