Back | Percentage change = \( \frac{final mass - initial mass}{initial mass} \) x 100 Above the x-axis is where the water concentration is higher in the solution than in the potatoes. Where the curve crosses the x-axis is where the potato pieces and solution are isotonic (same water concentration). Below the x-axis the water concentration is higher in the potato pieces. This means that they begin to lose water through osmosis. |
