Plant cells can freeze, damaging their membranes and causing death. To prevent this, the cytoplasm and sap in vacuoles produce solutes that lower the freezing point, while certain amino acids, polysaccharides, sugars, and proteins act as antifreeze. Some species only produce these frost-resistant chemicals in winter, in response to changes in temperature and day length.
